Asparagus and Eggs

 

Serving Size 2-3

2-4 Free Range Eggs
1 Bunch of Fresh Aspargus
1 Teaspoon of Extra Virgin Olive Oil

 

 

 

Clean and dice asparagus in fine pieces. Put a thin coating of Extra Virgin Olive Oil in the bottom of a frying pan. Add the fresh chopped asparagus. Cook asparagus until semi soft while still maintaining a slight crunchiness. (approximately 15 minutes on medium to medium-low) Next crack the eggs over the asparagus and stir. Cook eggs to liking. 

Serve with pita or wheat bread. Add hot sauce for a spicy touch!
