Chicken Tortilla Soup W/ NO MSG!!
Makes 4 To 6 Servings Total Time: 3 ½ hour
8-9 chicken thighs
1 can (4 ounces) chopped mild green chilies, drained
2 cloves of garlic, minced
1 yellow onion, diced
3 large ripe tomatoes- Diced
1 teaspoon cumin
Salt and black pepper to taste
2 tablespoons chopped fresh cilantro leaves
Juice of 1 lime
4 corn tortillas, sliced into ¼ -inch strips
½ cup shredded Pepper Jack Cheese
1 avocado, seeded, peeled, diced and tossed
with lime juice to prevent browning
Since chicken broth has MSG in it we can not use it. Instead we have to come up with a better alternative.
Clean 8 or 9 Chicken thighs and place in a pot of water. Add just enough water to cover. Season with 1 teaspoon of sea salt, about 1/8 teaspoon of pepper, one diced sweet onion, 2 minced garlic gloves and 2 teaspoons of cumin. Cook for approximately 3 hours on medium heat. Once chicken is cooked pull off of bone. Add the tomatoes and green chilies and let it simmer. Dice the pulled chicken and add to the bowl. Then add tortilla strips and cilantro.
Add Diced avocado and shredded pepper jack cheese to individual bowls according to your liking.
